Honesuki Knife

Winter, 2024

This honesuki style knife was made from a rectangle of 80CrV2 high-carbon steel. The knife took three days to make and a total of 24 hours, just slightly longer than the full tang paring knife. The honesuki knife is significantly longer than the paring knife, and it’s meant to be more versatile in the kitchen.

Similar to the paring knife, the creation of the blade is split into three phases: 1) forging the profile of the knife at the anvil, 2) refining the profile at the grinder, and 3) fitting the handle to the concealed tang.

My skills significantly improved from the paring knife, as seen in all phases of this project. I achieved a much cleaner face, as well as a completely straight and well-beveled spine.

I elected again for the forge-to-finish look to show the work put into forging the knife during day 1. I’m most proud of achieving the geometry of the handle through a grueling six hours of hand sanding.
